Fresh-baked bread? Oh yeah, we get that nightly chez LexiMonkey

Lexi came across this AWESOME no-knead, slo-rise bread recipe. Making a long story short, we have a big tub of bread dough in the fridge at all times. The recipe is so easy, even the monkey can pull it off. It's basically mix, let rise, fridge.

The trade off for skipping kneading is letting the thing rise for about 2 hours or so at room temp (over night works quote well too) once you slice off a hunk and form it. But we basically have the ability to make ourselves a small, 2-person loaf just about nightly. Or just roll it out flat and bake flat-bread.

Eventually, we want to get 2 tubs of dough going, one sweet desert dough, and one plain bread dough. And we're getting all French and keeping a fist-sized knob of then dough to toss in the next batch. Adds just a little....mmm to it.

Yeah, right now I've got a foot-long pain-au-chocolat roll cooling on the rack and I'm meeting Lexi in Berzerkeley after her afternoon appointment with it (and a thermos of coffay) in tow.

And yeah, I heard about those machines. I dunno, I don't think I'd be all that behind beer-dispensing machines, and I'm not all the über on tobacco dispensing machines.

I think they all should be dispensed by a human in a licensed, regulated environment. True, the machines are IN a dispensary, still... I'm a bartender. I mix drinks for a living. That's close to a machine incroaching on my professional territory. ;-)

And I'd not like the lines are long at the dispensaries in Oaksterdam. ;-)
